  • 2 lb pork belly
  • 2 inch fresh ginger peeled and smashed
  • 5 gloves garlic peeled and smashed
  • 1 tbsp olive oil

BBQ Sauce Ingredients

  • 1/4 cup soy sauce
  • 1/2 cup water
  • 1/2 tbsp oyster sauce
  • 2 1/2 tbsp vinegar
  • 1 1/2 tbsp brown sugar
  • 1/2 tbsp sriracha
  • 2 pcs. dried bay leaf
  • 1/2 tbsp peppercorn
  • 1/3 cup Hoisin sauce
  • 1 tsp five spice or 1/2 tsp. all spice
  • 2 tbsp honey


  • In a medium size bowl, combine all of the BBQ sauce ingredients and set aside.
  • Heat oil in a dutch oven over medium heat and add the ginger and garlic. Stir fry them until fragrant, about 2 to 3 minutes.
  • Add the pork belly, BBQ sauce mixture and 1/2 cup of water into the dutch oven. Cover and bring to a boil. Turn the heat to medium to low. Simmer for about 1.5 hours or until the pork is tender. Flip the pork belly at least once or twice during the whole process to avoid burning and add more water if needed.
  • Uncover the pan, remove the pork belly and put on the serving plate. Then set it aside.
  • Let the sauce cook until its thickened.
  • Strain the sauce directly to the meat.
  • Serve with rice, stir fry Asian glass noodles or steamed buns.
