In a medium size bowl, combine all of the BBQ sauce ingredients and set aside.
Heat oil in a dutch oven over medium heat and add the ginger and garlic. Stir fry them until fragrant, about 2 to 3 minutes.
Add the pork belly, BBQ sauce mixture and 1/2 cup of water into the dutch oven. Cover and bring to a boil. Turn the heat to medium to low. Simmer for about 1.5 hours or until the pork is tender. Flip the pork belly at least once or twice during the whole process to avoid burning and add more water if needed.
Uncover the pan, remove the pork belly and put on the serving plate. Then set it aside.
Let the sauce cook until its thickened.
Strain the sauce directly to the meat.
Serve with rice, stir fry Asian glass noodles or steamed buns.
