  • 2 lb salmon fillet with skin on
  • 3 tbsp olive oil
  • 1 tbsp unsalted butter cubed
  • 1 tbsp red wine vinegar
  • 1 tbsp capers
  • 10 pcs kalamata olives pitted
  • 10 pcs, pimiento stuffed olives
  • 1 pack compari tomatoes quartered
  • 1 1/4 tsp dried oregano
  • 3 cloves garlic peeled and minced
  • 2 inch fresh ginger peeled and thinly sliced
  • 1 tsp salt
  • 1/4 tsp pepper


  • Preheat the oven to 400 degrees F
  • Prepare the oil rub mixture by combining 2 tbsp olive oil, 1 tsp of salt, 1 tsp of pepper, oregano and garlic in a small bowl. Then set aside.
  • Using paper towels, pat the salmon fillet to dry. Place the salmon on a 7 inch x 13 inch casserole baking dish sprayed with oil.
  • Next, rub the oil mixture on the salmon and place the thin slices of ginger on top followed by tomatoes, olives and capers. Add red wine vinegar and season with a pinch of salt and pepper.
  • Finish with a drizzle of 1 tbsp of olive oil and a cube of butter. Cover the dish with aluminum foil.
  • Bake at 400 degrees F. for 30 to 35 minutes or until the thickest part of the salmon's internal temperature reaches at 145 degrees F.
  • Serve with your favorite pasta noodles and enjoy!
